My low calorie egg salad sandwich recipe!

I made this up a couple years ago, but always kinda winged it on the recipe. I figured that wouldn’t fly here, so  made it today and wrote down exactly what I put into it. It’s super simple, and totally yummy!

 

3 large hard boiled eggs
1/4 medium sized avocado
tbsp minced raw onion
tbsp mustard (I used horse radish mustard)
2 whole wheat sandwich round (the 100 calorie ones)

Throw away 2 of the egg yolks and mash the egg whites and 1 yolk in a small bowl with the avocado. Add the minced raw onion and then approximately 1 tbsp of mustard.

This makes 2 servings of egg salad sandwich at 244 calories and 12g fat each. (The fat count was actually based on using 3 egg yolks but we removed two of them so the fat grams in actuality are lower!) If you just eat the salad, subtract 100 calories per serving…
